Our raw honey will satisfy the most discerning connoisseurs of gourmet honey.
We do everything we can to give you the healthiest, most natural and best tasting honey. That’s why all the honey for sale here is gourmet raw honey.
- We use glass jars for all our products – because we believe that plastic containers have a detrimental effect on the flavour.
- We never heat our honey at all, not even a little bit. Some of the health benefits of raw honey are lost when it’s heated above 37°C, so we never heat it at all. Almost all honey you buy will be heated to some degree – suppliers do it to make it more liquid so that it can be filtered and poured into jars more quickly. It saves them time and therefore they can sell the honey more cheaply, but you also lose many of the health benefits of honey.
- We never filter our honey. We strain it through a mesh to remove only the larger particles like small pieces of wax, but we never filter it because filtering removes particles which have health benefits, whereas straining leaves them all in.
-
We only use pure honey. We never add anything to our honey!
- It’s all Gourmet Honey! Each of our varieties of raw honeys is sourced from only one type of flower. That means that each variety has its own unique flavour, and is only available during, and just after, the short period each year when that species of flower is in bloom.
Varieties of Gourmet Raw Honey
At different times of the year our bees have access to the following 6 species of flowers : Ironbark, Grey Box, Brush Box, Forest Redgum, Bloodwood, Macadamia. Therefore we only have specific varieties of honey in the few months immediately after the bees have collected pollen from that type of flower.
Prize winning honey!
Our ironbark honey is a prize winner. It won first prize in the light honey category at both the 2011 Murwillumbah Agricultural show and the 2011 Nimbin Agricultural show.
